Stuffed French Toast


What You Need:
  • Texas Toast
  • 1 Package Cream Cheese
  • 1/2 C. Cream Cheese
  • 1/2 C. Powder Sugar
  • 1 tsp Vanilla Extract
  • 1/2 can of Evaporated Milk
  • 1 Egg
  • 1/4 C. White Sugar
  • Cinnamon


What to do:

Beat together cream cheese, powdered sugar and extract, set aside.
Butter or oil a heated pan on medium-high heat.
Dip bread in egg mixture and cook one at a time.
When finished spread the cream cheese mixture and stick 2 pieces together.

Crystal's Stuffed Shells



What you need:
1- 12 oz box of Jumbo Pasta Shells
1 container of fresh spinach
1 1/2 cups of ricotta cheese
1/2 cup of grated Parmesan cheese
1 garlic clove minced
sea salt
ground pepper
Crystal's Secret Marinara Sauce

What to do..
Preheat your oven to 350 deg. Boil a large pot of salted water and follow the instructions on the box that the pasta came out of . After the pasta is ready drain it well and set it in a greased baking dish. In a mixing bowl mix spinach and the cheeses and season with salt and pepper. Put the mix into a plastic baggy and cut a hole at the end for a nozzle. Squeeze the mixture out into the shells and close the shells and place them on the greased baking sheet. Next coat all of the shells with marinara sauce and garnish with Parmesan. Cover with tin foil and bake for 30 minuets.

Crystal's Secret Marinara Sauce

What you will need..
Sea Salt
Fresh Pepper
1 tbs Basil
1 tbs Oregano
1 tbs Baking Soda
1/4 cup Brown Sugar
Extra Virgin Olive Oil
2 Cups of H2O
2 Carrots
2 Small Zucchini
1 Small White Onion
1 Green Bell Pepper
1 Red Bell Pepper
3 Cloves of Garlic
2 Tbs Tomato Paste
1 28 oz can of crushed tomatoes

What you need to do..
Take out your pot and heat it Olive Oil on medium heat.
Dice Onion and Bells, Mince Garlic and put them into the pan until the onions are slightly browned. Next you need to PEEL and SHRED your carrots and zucchini. Add 2 cups of water and then add your spices, baking soda, and brown sugar. Cook on Medium stirring every 15 min for about an hour or until desired consistency.

Easy Eggplant Parmesan



This is an easy, healthy twist on Eggplant Parmesan. I serve this dish with a side of spaghetti and fresh roasted garlic. (serves 4)

Ingredients:

2 Small Eggplants (cut lengthwize)
4 eggs beaten
1 1/2 cups of Bread Crumbs
1 jar of Pasta Sauce

What to do:
Preheat oven to 375. Coat the eggplant with egg and dip in bread crumbs. Bake for 15 minuets, flip, and then bake for an aditional 10 minuets.

Shrimp on the Iron




I don't have a grill so I make everything in a cast iron dutch oven. I threw this together for dinner and everyone was singing my praises. I made 12 servings and it was devoured by 4 people in one sitting ha ha.

Okay so here we go..

What you need..
Shrimp
Penne Pasta
Water
Alfredo Sauce
Creole
Lemon Pepper
Garlic
Garlic Powder
Butter

What I did..
First I took my pasta and cooked it, drained it, and rolled it in some Olive Oil (Keeps it moist)
Next I heated up my pan on medium/high heat. Brown some butter, caramelize 2 cloves minced garlic, 1/8 Onion (optional), and season the shrimp while it cooks with some creole, lemon pepper, garlic powder. After your shrimp is nice and brown around the edges you will take out the pasta, pour a little Alfredo over the top and sprinkle a few shrimp on top and VOILA!! A super simple meal.

A Taste of India-Soup




Soup:
Ingredients:

  • 2 tsp Olive Oil
  • 1 Medium Onion
  • 2 tbs Tomato Paste
  • 1 1/2 tbs Yellow Curry
  • 1/2 tsp Cinnamon
  • 1/2 tsp Grounded Sea Salt
  • 3 Cloves Garlic
  • 2 tsp Grated Ginger
  • 1lb Peas
  • 6 c. Water

Paratha (Indian Bread)Ingredients

  • 2 c. Flour
  • 1 c. Water
  • Pinch of Salt
  • Olive Oil for Frying

Directions:

In a pan heat oil on high, add the onion and cook until golden brown. Stir in tomato paste, curry, cinnamon, salt, garlic and ginger and cook for 2 minuets.

Next, place everything into a slow cooker or dutch oven including the onion mix. Cook for 2 hours+

hint: For a more creamy soup pour in cream of coconut (1/8 cup) before serving.

Place cilantro on top for decoration.

For my dish I placed the soup in a bowl and topped with a small bouquet of Cilantro. '

In a small white bowl used for making lava cakes, I placed a ball of stick rice topped with carrot, celery, and green onion caramelized in some thyme, sea salt, garlic powder, curry, and red pepper flakes. I then placed a small paratha to gently caress the rice.

Serve and Enjoy
